Cooking with a real wood fire, indirectly, is really taking barbeque back to its roots, enabling you to impart maximum flavour while keeping your food moist and tender.
This ProSmoke Edition of the 16'' Longhorn, has been tuned and designed by us to suit more cooking options, it runs an upgraded chimney stack and larger firebox than the original, this means the smoker can run hotter than the original if needed, as we do sometimes love a hot and fast cook, especially with large cuts of meat like brisket.
Offset smokers are not set and forget, but allow maximum flexibility in terms of building your own fire, controlling the smoke flavour and heat.
Once mastered there is no other form of barbeque quite as satisfying.
Don't expect to master this art right away, as the road to becoming a pitmaster takes time, but know that every piece of food you serve, is a reflection of your skills running a proper pit!
The Cactus Jack longhorn is a lifetime premium offset smoker, it can do it all.
Straight out the box it's a standard offset smoker, but this is made from heavy-duty 7mm steel, coated in a high-temperature paint.
The other bonus of this cooker, is the chimney can be mounted on either end of the cooker, making it standard and reverse flow, the plate for reverse flow cooking is included!
Reverse flow simply directs the heat under a metal plate, then back over the food and out of the chimney.
Reverse flow is generally for lower temperature cooks that require more smoke flavour.
These smokers can achieve an even temperature from left to right, by a patent ceramic stone between the firebox and cook chamber, this also doubles as a filter, preventing any soot and ash entering the cook chamber.
No longer do you need a complicated baffle system to even the cooking temperature left to right.
This stone can also be removed for a traditional hotter form of cooking, giving you a very hot right side to the grill, with a lower level of heat to the left.
The quality of this smoker is evident from start to finish, from it's handmade cool touch wooden handles, to its heavy duty wheels. Once heated they simply require 1 to 2 logs every 20-30 minutes, they are perfectly balanced for consistent repeatable results and will last a lifetime.
