If there's one thing you want from an offset smoker, it's thick steel walls. This is the single most important thing, a thick walled offset smoker will run at an easy consistent temperature once it's heated.
Cheap offset smokers with thin walls, will loose heat faster than your fire can supply heat, and become impossible to run and manage a consistent fire.
A steady heat running through a well built smoker like ours, will cook food faster and better.
Heat fluctuations will have you frustrated and forever running late on cooks, the better the smoker the easier it is to use.

Traditional flow is the heat running from the firebox, through the cooking chamber and out of the chimney, simply right to left. This diagonal heat path of the air means you can utilize different temperatures in the cook chamber for ultimate cooking flexibility.
Reverse flow is a lower smokier cooking technique, where you direct the heat flow under a plate, then back across the food.
Traditional is our chosen method every time, but if you wanted the reverse flow for a certain type of cook, you will just need our reverse flow kit consisting of a second chimney and steel baffle plates.
We've been using these smokers for years, and helped develop this ''Pro smoke'' version of the Cactus Jack you see now.
We decided the smoker needed to run just a bit hotter and draft faster, much like the American smokers we imported and tested.
The engineers tweaked the existing design and knocked it out the park, these smokers draft, cook and run better than any offset on the market, its the best offset smoker in Europe.
All ''Pro Smoke'' versions of the Cactus Jack come per-installed with the ProSmoke BBQ thermometer for easy identification, they are only available from us here in the UK.
Lets say you want even temperatures across your cooking grate.
The 16'' versions of the Cactus jack can do this with a patent ceramic stone.
This diverts the heat from the fire box straight up and across the food.
This will also stop ash or flames reaching the cooking chamber on a windy day.
This gives a ''top down'' cooking effect, meaning the heat comes from above rather than underneath the meat. The filter will run your smoker in the 225f to 275f cooking temperature range.
We also supply a metal bracket so you can choose where the ceramic stone sits,. By default it is mounted up against the hole between the cook chamber and firebox, but this bracket can mount it further away.
A gap of about an inch, will increasing heat in the cook chamber by 50F, but still keep it even left to right.

A feature of the ''ProSmoke edition'' Cactus Jacks is oversize firebox, this not only helps with the air flow and temperature control, it means you have a good size grill at the ready anytime. So why not throw some meat over the fire while you slow cook in the main chamber!
Over sized fireboxes also help with temperature control, as you are able to move the fire closer or further away from the cooking chamber to control the heat, as well as using the door to control the airflow.

I spent years trying to find an offset smoker to offer our customers.
We thought we could make a cheaper lightweight model work by upgrading the chimney and modifying the fire box, but none of them worked well and on wood splits alone, they all need a charcoal base to keep going and the temperature swings when cooking were wild.

The Cactus Jack 16” has been a workhorse and my go to smoker for a while.
The thickness of the metal retains a lot of heat which means I don’t need to constantly tend and watch the fire. Paint is not guaranteed, due to the extreme heats your smoker will see, this will fade overtime, but there's information in your Cactus Jack guide that will assist you in looking after your smoker going forward.

As soon as you check it out you know it is a quality piece of kit. Really well constructed and finished. I upgraded from a cheaper Amazon purchased smoker and the difference in finished food product is amazing. I couldn't recommend it any higher.
If you're reading this, then I've been where you are. You're probably thinking "That is a good looking Pit, but can I justify the spend".
First things first. Prosmoke is a great company to do business with. Oliver is Knowledgeable, Friendly, Honest and Passionate about his products. He understands that making an investment like this is a big decision and goes the extra mile to ensure that you are happy with your choice.
When the Longhorn arrived, I was blown away by it. The Engineering is excellent, The Finish is stunning and man.....it's Heavy! Make no mistake, this is a Premium Product.
The Rubber Coated Wheels really helped to get it moved into place. Everything Fits well, the Stack, the Doors, the Shelves and Grill Racks are all perfect.
As soon as I had a Fire going to Bake the Paint, a few things were immediately clear.
1) The Handles on the Firebox and Cook Chamber make lifting the Doors easy and safe. (They are heavy)
2) Lighting a Fire is easy because of the amount of draw through the Smoker because of the tall Stack.
3) The Doors fit really well and once warm, seal really efficiently.
4) The thickness of the Steel, really holds the heat.
As a beginner, I wanted to use the Longhorn a few times before doing this review, so I could be as honest as possible. I was a little apprehensive about Fire Management, but I have to say that, with a little practice, it's not that hard. (Beginner Tip: As it's a real Fire, there are many variables that effect your Cooking Temperature. Type of Wood, Size of Split, Size and Position of the Fire etc. Change ONE thing at a time, and note the changes, then change something else and note that. That way you will learn quickly and won't get frustrated!) The Longhorn seems to help you learn because it's responsive to changes and you quickly see the results.
If I had to find something to criticise, it would be the Thermometer. Because it's mounted in the Lid, the Gauge reads higher than the temperature at the Grill. This can be calibrated easily, so it's not really an issue at all, but I felt I should find something!
Using the Longhorn is an experience, rather than just a Pit. You have to be involved with it, tend to it, pay attention to it. It's more than just a BBQ. I have to say that I was looking at a New Kettle Grill. The model I wanted was out of stock and I'm so glad! The Longhorn allows you to do everything a "conventional" Grill will do, and I think, Produce better tasting food. 8 or 10 hour Smokes to Hot Fast Grilling and Searing, this will do it all, with better results, and with an immersive experience at the same time!
So to summarise, I've been where you are, and I'm so glad I have a Longhorn. You will not be disappointed. I hope this helps you to decide.
Starting out as a small event catering bbq business it is scary and daunting!
Never the less, this unit was the real deal and my god did it change the way we bbq! Dealing with the team at pro smoke was a pleasure, no such thing as a stupid question and trust me i had a few!
