He's travelled across Texas visiting some of the top restaurants, honing his BBQ skills and achieving what we consider the Mecca of BBQ!
Come and join us for a full day of cooking, learning how to prepare, season and cook Texas style BBQ, start to finish!
This course stands out as the most comprehensive and informative in the UK when it comes to offset smoking and Texas BBQ in general.
On the day you'll learn:
- How to trim, season and cook brisket, pork ribs and turkey
- How to hand-make and smoke Texas style sausages from scratch
- How to perfect your cooks with pickles, sides and sauces
- The essentials of offset fire smoker management
- Key principles of cooking on every type of BBQ
- NEW: Old school central Texas style direct heat cooking.
- How to time your barbecues so everything is ready when you need it
The class is held at our HQ in Banbury, Oxfordshire and demonstrated on our 250 gallon Shirley fabrication smoker.
All the food cooked will be for eating at the end of the day.

Great masterclass, David is very knowledgeable and shares his experience in a fun and informative way. Amazing that he managed to prepare 5 complex dishes to 20 people in less than 6 hours as well as sides.
He even makes Crocs look fashionable again.
