This offset smoker's top of the line, plain and simple, it's a huge capacity smoker with all the features straight out the box. It would handle the demands of a busy restaurant or catering operation and still look the part.

It also comes with a unique heat control baffle tube in the main cook chamber, meaning you can manipulate the heat in the main chamber and warming box with ease, whether you need hot throughout, or one hot and one cold, this smoker has you covered.

The quality of this smoker is evident from start to finish, from it's handmade cool touch wooden handles, to its rubber coated wheels all in a 7mm thick steel body. Once you heat them they simply require 1 to 2 logs every 30-40 minutes. They are perfectly stable for consistent repeatable results and will last a lifetime.

A generous smoker with everything you need. Great value for money

I’ve had the Chuckwagon for a few months now having smoked on a Big Green Egg XL for the past few years and wanting a new challenge.

The smoker, like the BGEXL is generously proportioned with a HUGE amount of cooking space (I’ve only come close to half filling it when smoking 8 monster Louisiana style ribs -and I still had stacks of space left). The main chamber has an extra raised bracket allowing you to cook at multiple temperatures if needed and there’s an adjustable vent which allows you to control the temperature a (something I’m yet to master) and a huge smoke pipe along the bottom with generous holes which ensures the smoke distributes evenly.

The chimney itself has a huge door which is really handy for large cuts of meat. All the shelves are removable and there’s a hanging rail at the top which would allow you to smoke a couple of full salmon I’d imagine. It’s great for jerky cooks.

The build quality is brilliant. Nearly everyone that has tried to lift the lid has had to double take as it’s heavy due to the thickness of the steel. The thick steel holds the heat beautifully and you can rest logs on the firebox to warm them so they take more easily if needed.

The firebox, like the smoking chambers is massive. I’ve taken to having a couple of logs burning at the back and then have the next logs ready to roll over from the front which works quite well. You have a grill, pot hanger and a flat plate on top which you can cook on but I’ve not tried that yet but should be good for bacon and beans.

The Cactus Jack 20” Chuckwagon is really heavy so you’ll want to make sure you’re on a sturdy base. I can move it around on the tiled patio but I wouldn’t want to move it over grass or gravel on my own.

It’s a totally different taste to charcoal with chips, the wood and smoke penetrates the meat much more deeply but isn’t overwhelming. I’ve not left the egg behind but it’s a fantastic extra tool in my smoking arsenal.

The ProSmoke team have been great. It was bought for me by my wife but the delivered it, got it into position, set it up and showed us everything we needed to get started. They’ve been in hand ever since for any questions and have been exceptionally helpful.

It is without a doubt a big expense however it’s worth every penny if you enjoy spending your weekend cooking for the family or just smoking food in general. You won’t be disappointed.
